- coriander, finely chopped (and some for decoration)
- garlic, finely chopped
- 1/2 yellow pepper, sliced
- 1/2 red pepper, sliced
- mushrooms, sliced
- 2 small courgettes, sliced
- 2 spring onions, sliced
- sesame oil
- soy sauce
- honey
- juice of 1/2 - 1 lime
- cooked egg noodles
1. Finely chop the coriander and garlic. Slice the vegetables and soak the noodles in hot water for 10 minutes.
2. Put the chopped coriander, garlic, spring onion and chilli in a hot pan with the beef and stir fry.
3. Then add remaining veg and stir fry.
4. Add some sesame oil, soy sauce and honey to taste. Sprinkle the lime juice on and taste.
5. Add in cooked egg noodles.
6. Taste and add more of any of these sauce ingredients until taste is as required. Sprinkle some coriander leaves and toss and serve. Top with whole coriander leaves for decoration.
